This can be done fairly early in the game, there will be missions that you can do where you will have to deliver a high-end car to a destination, cars like a McLaren P1 for example, simply use one of these cars on the highway to get this achievement in the bag withing the first few hours of the game

I don't know if the Challenges are the same each time, but I got the Challenge for delivering the P1 for Tess on Wednesday night working towards the First Qualifier. I know there's another car you can do this with earlier, but I didn't realize there was an achievement for this back then, so if you missed that one, you can get it here.
