This achievement is quite easy to get, and this video from TC9700Gaming explains how to take a snapshot.

At any time in the game, press the right stick (RS) down to take a snapshot of your car as it appears on your screen. This will be saved to your "snapshot" window on the main menu, and grab you the trophy.

Simply press  whilst playing at any time to take a snapshot for the achievement.
