This fight isn’t too bad.
Hold the left to one side of the screen and wait for Guryon to make a noise and start flashing and then move to the other side of the screen and start punching him as his axe is returning to him.
If you do get hit you can still get the achievement. Just let him kill you and you’ll start again at the last checkpoint and can retry.
