This can easily be done in dungeon "Cragmire Crypts" it is availible from level 19-31. There are almost only bandits so it shouldn't be to hard.

It is in Blackdagger Ruins, you don't have to be in the area to play the dungeon. you can just queue for it in the menu when you are the right level.

Anyone had any issues with this not unlocking? It says done, unlocking but has been stuck like that for ages

Once you've quested your way to 20, you'll come to an area called Blackdagger Ruins. (Personally I was only 19 but was still able to go there.)
Essentially every enemy in the zone is a bandit.
Between all the quests, the "Storming the Keep" skirmish, and the "Cragmire Crypts" dungeon, you should easily hit 500.

If you don't reach 500, I'd repeat Storming the Keep. Cragmire Crypts is bigger but the queue can take a while and there are a lot of non-bandit enemies.

You just pause it, go to the Quests section, and choose Queues. As long as you're in the level range (18-30) you can queue for it.

You'll get this trophy for killing 500 enemies classified as Bandits. I believe enemies referred to as Pirates work as well, as they use almost the same enemy models. However Nashers, the enemies found in the Blacklake District, DO NOT count for this trophy.

The best place to find Bandits is the Blackdagger Ruins. You'll likely even get your 500 kills before finishing the adventure zone questline. Pirates are found in the mid-to-later parts of the Pirates' Skyhold.

To check your progress on this trophy first press the Options button > Quests > Journal > press R1 to go to Achievements > Slayer > hit cn_S to show them if they aren't visible and scroll down with R-stick to the Bandit Slayer entries.

Bandits are very common within the game world, you will recognize them as wearing ragged clothes and perhaps a bandana over their faces. They are generally found in the Blackdagger Ruins. If you do the 'Cragmire Crypts' dungeon you will reach 500 bandit kills in no time at all. If for some reason you don't, you'll encounter Bandits again in the 'Lair of the Pirate King' dungeon delve.

The progress of murders can be tracked in the achievements tab in the diary.

The ruins of the blackdagger are no longer there, but they can be found on Xanthar in the first location of Undermountain - the catacombs
