This achievement will be rather easy fortunately! Only slightly time consuming. Definitely faster than killing 100 Crystal Golems.
I got this after completing the 3rd Githyanki Warden Expedition, so about 11-12 missions into the Stardock stuff.
The Githyanki are usually in groups of 4+ enemies engaged in fights around the various Stardock Githyanki quest missions(hurry to kill them before the AI enemies), and when searching the crates in those missions they will spawn in groups of 4 which might include Crystal Golems.
You can probably get a good 50-60+ Githyanki per Githyanki mission if you kill quick.
Pretty easy, not really grindy!
You can find your progress in the in game menu's under:
"Quests"
"Journal"
Right tab to "Achievements"
Scroll down to "Slayer"
Scroll down if necessary to "Githyani Slayer"

Mod 17 added both a new race and enemy type called "Githyanki". They are humanoids that wield magic or weapons and are found in the dungeons and areas of Uprising in the Yawning Portal.
This is a continuation of the Undermountain campaign.
This trophy requires you to kill 500 of them, but I wouldn't worry or specifically farm this trophy, as you will get it basically automatically while going for "Master of Fragments".
