This Achievement doesn't require you to play out the Super Bowl in real time. Simply simulating a season in which your team wins the Super Bowl is enough. I suggest selecting Tony Dungy and the Indianapolis Colts. In my simulation, they won the Super Bowl in their first season. If you're having difficulty, you could always sim up to the playoffs and save, then just load your game from there (assuming you made the playoffs) and re-sim if you aren't successful the first time.

Start a season with a good team like the Colts. Simulate until the playoffs and then after that simulate game by game until you eventually win the Super Bowl.

You will get this achievement while getting the "Best of All Time" achievement.
Just make sure you at least make the playoffs, you will either play 3 or 4 playoff games(depending on how many games you win in the Regular Season.) Just sim or play and make sure you win the playoff games. Once to the Super Bowl game, also either play it or sim it. Once you win the Super Bowl game, the achievement will unlock.
