If you're just looking for the achievement, simply start a two-player game. Choose the AHL team for your side, and the NHL team for the second player. You don't need someone to play the NHL team. Pull the goalie if you need a goal.
Just make sure not to change the number of players during the game, or the achievement will not unlock.

Start a game with a difficulty of Superstar, then select your team from any of the AHL teams (Hershey and Syracuse are 2 of the top teams), then choose your opponent as any NHL team you think you can beat. Keep the periods short to increase your chances of winning small, or make them longer if you cannot score on them and need more time.
