Go into the Create options and create a custom team. You can devote as much or as little time to creating the team as you wish, the key is just to create and save it.
Once you're done, start and complete a Play Now game with your created team; you can do it against the CPU or another player, but your controller must be assigned to control the created team. Once the game is finished, win or lose, the Achievement will unlock.

Go to My NHL 08, then Creation zone and then create a player ( or team), then choose either player or goalie. Customize your player, then once you are done put him on any team of your choice. Then go to Play Now and choose the team he is on, or choose the team you created. Play a game on any difficulty to unlock this achievement.
