You can do this using the ol' "two controller" method.
Start a game using two controllers in play now. Set to superstar, shortest periods possible. the trick is to not OVERPLAY, your opponent won't be doing much so just score with 3 seperate players on your time.
Get the puck and then pull the opposing teams goalie. Shoot and score with 3 different players and then spend the rest of the time as idle as you can, clock should run out soon... The trick here is to NEVER shoot on the goalie! If the goalie makes some good saves then he will be a star of the game also!

Start a game on Superstar difficulty, then play all the way through trying to score as much as possible, getting as many assists as possible, and a shutout. Then your goalie should get a star for a shutout and the 2 other players should get stars for their points. OR just sit behind your net again and take a few shots during the game. This method works but may take a few tries.
