Easiest way to get this achievement:
Start a Play Now game using the OHL - Barrie Colts (highest rated team I saw from the 3 leagues), and pick one of the weaker NHL teams to play against (I played the Thrashers).
After selecting Pro difficulty, put all the gameplay sliders for the CPU at the lowest setting, and all of the Human gameplay sliders at max. This will make it extremely easy to beat any NHL team, just keep shooting away.

If you're still having difficulty with this one simply go to roster management and trade crappy players to an NHL team and then do a Play Now against them. (I just traded the entire Japanese roster to Edmonton).

This strategy definitely works. No need to trade the Jap Roster (or any other league team) to Edmonton (especially with the sliders adjusted). They already suck lol..
