There's an easy way to do this by yourself and it won't feel any different than playing a normal game. All you need is a second controller.

Start a new GM Connected league or use your current league and play a game against a computer opponent (make the periods 3 minutes and rookie difficulty if you wish to make it easier)

Once you select "Play Against the CPU" move your second controller onto your team. After selecting your jersey you will be on the starting lineup screen. While still on the Starting Lineup screen, hit on your second controller until you see the letters "CO" under your second controller. This will lock this controller as a coach and will only allow the controller to change lines, meaning you won't be "shorthanded" by having the second controller taking over a player on the ice.

Now the rest is up to you, simply win the game and the achievement is yours!

You can do this one by yourself if you don't mind playing a little shorthanded.

Just go to GM connected and create your league and set the max number of players to 2 or more. Then just sim through the first schedule block until you get to you first game.

Select the game and choose to play against CPU. All you'll have to do is plug another controller into your console and play away. It may get a little frustrating at times, but since you can pass to yourself it doesn't really get that bad.
