Quick and dirty way to get this is start Franchise Mode, select the new franchise, and do the expansion draft to start your team. When you are able, go into gameplay settings set the difficulty to Rookie, and move all of the sliders to 100 in favour of the human player(shooting, skating, puck handling), and to 0 for the CPU. Then start simming the season a week or 2 at a time. Keep an eye on the standings and make sure your team is at least 3rd place in your division, which would guarantee you a playoff spot.
If your team starts losing games, choose to play games. You can start a game, pop in 5 or 6 goals (which should be easy with all the sliders in your favour), and then quit the game, which will then get automatically simmed. Keep doing this until the you make the playoffs. When you make the playoffs, do the same thing. Start the game score 5 or 6 goals, then quit out. Keep doing this until you win the Cup. The achievement will pop right after you win the last game in the Stanley Cup Finals.
