Best to do this on rookie difficulty and sit on a 1 or 2 goal lead until your opponent pulls their goalie for the extra skater. Once you get a clear lane to the empty net, hold

Or just do it in shootout mode against a 2nd controller (remember to turn on goalie control for the second controller so you can move him out of the way).
