Just go to Extras -> Training And Practice then go through the drills in order. Most are pretty easy, I just had some trouble with the Tap-Back Deke, but got it after a few tries. Seems you have to perform the deke then get control of the puck for it too count. Worth noting is that you only have to complete drills up to Advanced Deking, Advanced Deking 2 is NOT required.

The initial spawn position on the Defense/Poke Check drill has caused me issues in several different versions of the game. All played on the xbox one. Going offline, deleting the local save file, then earning the achievement from scratch has fixed it every time. Note the achievement on this generation of boxes will be known to the system but will not show until going back online. Since the save file which is actually reflective the game progress is saved to the xbox servers, delete the just created local save file, before going back online. This will cause the game to synchronize the save files. Of course, the reverted save file will not have the training drills marked as completed.
FWIW, start with the poke check drill to make sure it is working, otherwise any completed drills will be cleared on the new save. Doing the poke check drill first allowed it to function properly.

Is this broken on Series X? Can't do the poke checking because the puck spawns in the wrong place?
