I got this playing shootout mode with the Eastern NHL Allstars vs. An ECHL team with a very low rated goalie. In order to do the one handed tuck, you must advance towards the goalie and hold LB and press RB but there is a way to increase your odds of scoring. First hold the right stick away from the main shooting hand (right for left handers, left for right handers) as you approach the goalie. Now begin skating in the direction you are holding the puck just as you get to the lines in the face off circle. The goalie should be moving to block your shot. While still holding the puck away, hold LB and press RB. Your player will one hand tuck towards the edge of the goal away from the goalie. You may not get it right away but it took me less than 5 minutes trying this to score the one hand tuck without needing another player.
