I was able to get this unlocked by heading over to the shootout mode under More in the main menu. To do a one hand tuck you have to move the 
left or right to put the puck in the players forehand or backhand grip. After that skate to the goal and press 
+ 
at the same time. This causes the player to move the puck to the opposite side of the grip and if done correctly it goes around the goalie. A little difficult to get the hang of until you figure out the way to do it effectively every time.
For context in the shootout I chose the Alltime greats team vs Internation Korea team.
