2 controller method:
Quickest way to get this is in SHOOTOUT mode (under MORE on main menu). Choose offline shootout mode.
I played with the ATLANTIC ALL STARS against the international team JAPAN, although the teams really won't matter much as there won't even be a goalie in the net.
When the game starts, pause and go into settings and turn Japan's goalie (either home or away) to on (meaning you can control the goalie). Then when your main profile is up to shoot, move the goalie out of the net to the side.
Once the goalie is out of the net, skate to the net and use the following button combination to flip the puck into the net and score.
Click
and press 
down on the right stick then while holding RS in and down, press 
to flip the puck into the net.
It works best when you're nearing the front of the crease.
Achievement will unlock as soon as the goal is scored.

If you don't have another controller, I found shootout mode to still be fastest.
