The easiest way to do this is in two players, and you don't even need to do anything special. With player 1, select any team with superstars like an all star team. Next, press 
once to lock player 1 in as a goalie. Next, with player 2, select a team like Japan. Then, go into the settings and set period length to 3 minutes. Now, play the game. If player 2 gets the puck before player 1 scores (which shouldn't take long), you may need to move the skater around so he loses the puck. If player 2 gets it after Player 1 scores, you may be able to just have him stand there. It seems like it's impossible to make player 2 lose the puck if he's not being moved.
NOTE: I can personally confirm this works since I just did it myself.

I wonder if this would be quicker in shootout mode, but this method worked while I dicked around on my phone.
