How to unlock the We are the Champions! achievement in NHL 23 - Definitive Guide
This achievement is done in Europe and NOT the CHL.
From the Main Menu:

- Offline
- Be A Pro Career
- Watch the EXACT SAME unskippable cut scene that has been in this game for at least three years running
- Create your character. Doesn't matter what, I prefer offense so I go with a Center Sniper
- Start in Europe
- Choose your team. It really doesn't matter who but I recommend either EHC Red Bull Munchen, HC Ocelari Trinec, or ZSC Lions since they'll give you the best teammates
- Game Settings
- Be A Pro Settings
- Game Settings to 1/4
- Period Length to 3 minutes
- Difficulty to Rookie
- Rules to Off
- Injuries to Off
- Be A Pro Settings to Classic
- Be A Pro Simming Penalty to Off
- Weekly Gained XP Reminder to Off
- Auto Save to Off
- Back out a menu and select Advanced Settings
- Playoff Series Length to Single Knockout
- Back out a menu to Gameplay Sliders. Adjust everything to your favour while nerfing the CPU to 0. The big ones to focus on are Speed, Shooting, and Goalie
- Back out two menus and Start Career
- Sim to Next Game
- Once the cutscenes are done, tab down to Game Settings and Save, creating a new file
- Tab back up and you have a choice here. You can either Play Game or Sim Game. I always went with Sim Game, simming the first two periods and playing the third to win if my team was losing. If you do somehow lose just reload the save and try again
- Save after your win, and repeat the above process until you've won the CHL Final. It takes six games total to do this so this is a pretty fast achievement
- Achievement unlocks at the end of the game
this trophy is currently (and probably permanently) broken. Despite winning all of your games, the game will automatically go to the offseason and the narrators will talk as though you lost. It is bugged. And I doubt they patch it now.
