Pretty simple one to get with two controllers and a little set-up.

From the main menu, RB to 'More' then select 'Shootout'.

Make sure player 1 (a la your profile) is the home team on the right, player 2 left and the away team.

Go to game settings, then select 'game settings' again. Under ‘Shootout rules’ change this to off. This will allow you to have the option to shoot even if you stop moving and there is no time limit in the shootout with these settings. Also use 5 shots instead of 3 to avoid more restarts if you fail.
Under the first 'game settings' tab, make sure you turn on Away goalie.

Once the shootout starts, shoot quickly with the second controller to get their effort out of the way (repeat this as necessary).

Then, rubber band the second controller to the left (random tip: hairbands also work).

With your first controller on your profile, skate behind the net on the right-hand side.

When you're close to the net, press Y and the same time move the LS from the north counter clockwise in a full circle back to the north to try and wrap the puck around and into the net.

Might take a few tries but with the goalie to the left you have a wide goal to do this.
