Credit to Jdchicago13’s solution from NHL 23, as it still works in NHL 24:
Head over to the shootout mode under More in the main menu. To do a one hand tuck you have to move the RS left or right to put the puck in the players forehand or backhand grip. After that skate to the goal and press LB and RB at the same time.
This causes the player to move the puck to the opposite side of the grip and if done correctly it goes around the goalie. A little difficult to get the hang of until you figure out the way to do it effectively every time.
For context in the shootout I chose the Alltime greats team vs Internation Korea team.
