Go into the options and change the difficulty to All-Star. Also change the period length to 10 minutes. This will give you a full 30 seconds at the beginning of each game to score. Also edit the sliders in your favor. Give yourself 100 in each category and give the CPU 0 in each. When you start the game, win the faceoff and quickly put on a full out attack. If you can score before the clock reads 19:00 or less then you should be good. If you do not score in time then just pause the game and chose rematch to start it over again.
With all the sliders in your favor it should be easy to score on the CPU. Unfortunately the achievement will not pop until the game ends so you'll have to kill the rest of the clock after you score in the 1st minute.

Score within the first minute of the game (1st period). Must be on All-Star or better level. I set my games to 1 minute periods. Took only a couple of games to get the achievement. Easiest if you use an All-Star team against Denmark or Belarus. This is not 1 minute real-time, it is 1 minute of the game clock. If you want to give yourself 1 minute real-time, set the periods to 20 minutes and the clock to real-time. This way will force you to wait a long time for the game to end (the achievement unlocks after the game), but it will give you more time to score in the beginning.
