This one is a little tricky. First, set your difficulty to Pro (not sure if this is necessary, but it only takes a second to set). If you try to start a quick game, you'll realize that USSR and USA 80 are both locked. Go to Game Modes > Challenge, and scroll down to USA '80 and start the challenge. From here, you only need to win the challenge to satisfy the achievement requirements. There is no need to unlock anything.

Unfortunately, it seems like a lot of the settings are locked, so you won't be able to use sliders to your advantage. The game seems to default to 5 minute speed on this one. If you are familiar with hockey games, you shouldn't have too much trouble. If you are new to hockey games, I recommend going after easier achievements first, so you can get a feel for how the AI plays. The AI is very aggressive when you have the puck, so make sure you are comfortable with your controls. This will allow you to make quick decisions with the puck. A good way to score is to pass to an open man and shoot just as the puck arrives (one-timer). If it doesn't go in, you may have an opportunity to go to the net and shoot a rebound in. Otherwise, just keep shooting and you should score a cheap goal or two. Also, the speed burst works really well to set up odd man rushes, but it will fatigue you faster.

Defense isn't too hard. I recommend controlling a LW, RW, or C and run into the USSR puck carrier and then check him. Practice makes perfect.
