easy way to do this is when you have the puck look for anyone open and just throw it to them before you get past the blue line then once you past the blue line look for someone heading to the net pass it to them and shoot right away.
you can also put it on easy turn your passing, scoring, speed boost and stuff like that up and turn the goalies saves, anticipation and stuff like that all the way down for easy goals and assists.
just go for 2 assists over 1 every time and it will come in time. =]

An assist is the pass or passes which immediately precede a successful scoring attempt; a maximum of two assists are credited for one goal. You can do this in franchise mode or use the two controller method to get this. You should aim to get 2 assists per goal.
