To perform a deke, press LB whilst using the standard controller settings. A dekes can be used to get the puck past an opposing player or to attempt to confuse the goalie when shooting.
Approach the goal press LB to perform a deke before pressing X to shoot. If you successfully score a goal, the achievement will unlock.

I doubt you even care now(it's was so long ago when you last edited the guide 
), but this can be done against an Empty Net as long as you are close to goal
