Here's a video from Cheevo Guides that shows an easy method to score goals. It may take some practice to get used to, but my only tip is to use the directional buttons instead of the stick in order for more precise movements when doing the 90 degree turn.

Was having some difficulty trying to score with the above method and never managed to score using any combo of slapshot/crossover, also couldn't score on open solo breakaways.

What eventually worked for me and allowed me to start scoring consistently was using a pass and one-timer. Pass back to a player in front of the goal and immediately tap B as they're receiving the puck.

Additionally, if you're attempting to score for the first time for the achievement, I'd recommend having user records set to on. I went for the Strategic Mastermind achievement first, got it, scoring 5 goals in the process, but this achievement never popped. Started a new game and turned user records on and it popped on my first goal.
