My boosting partner and I traded wins by simply jumping off the map until all our stock (3 hearts) was gone. Took about 10 seconds to finish the match.
At the result screen, we selected rematch and just rinse and repeated the process. We weren't keeping track of our wins, but eventually after about and hour, we both had this achievement. It took my partner longer to get the achievement than me which let us to believe some of the matches weren't counting for some reason. His game would crash every few matches so that might've been the cause, but again, we weren't keeping score so I can't 100% confirm that.
Basically, it took us about an hour and a half to get all of the online achievements. I noticed the solution by mcnichoj says this is time consuming because you have to wait the full 6 minutes every match, but that wasn't the case for us. Maybe the game was recently patched? I'm not sure but all I know is we were able to get all the online stuff done in less than 2 hours, crashes and all.

I see people discussing this and mentioning wins. Can you tell me if you actually need to win or just participate in the fifty matches?

Yeah I saw the change. The patch also completely screwed up online or the online became screwed up in the afternoon by itself and the patch didn't fix it.
Can't even find myself duo boxing.
At least once it works now with the stocks, you can speed things up by suiciding.
Ninja edit: Before I had the chance to post I actually found myself finally while using the Japan region. Takes about an hour to boost.
Pick whatever characters, pick the Jellyfish Fields Spongebob stage (upper-left corner of stage select screen) and then just have one of the characters suicide three times. Should take about ten seconds. Mash X (or square for any PS users reading this) on both controllers to rematch. The loading screen should take about 50 seconds.
I highly suggest putting on a comedy podcast and then just lowering your TVs volume to make the time pass quicker.
I used a One X and a One S to boost. (The X1S crashed a few times.) If you're gonna use a Series console I advise boosting with only another Series console. I was able to get a Series and a One in the same lobby for custom lobbies but ranked and quick might not work that way.
I ran into a weird glitch (possibly?) where quickplay was a 4 player free-for-all room. I just backed out and went back into it to get 1v1 lobby. Never saw that glitch again.
I'll put this all into the guide above tomorrow when I test to see how the servers are acting.
