There are 12 racers to choose from when starting races.
If you want this sooner than later, then choose Free Race, Solo, Beginner difficulty and Breeze AI. Pick the first track if you want. I don't know which track is fastest. Then pick a racer you haven't won with yet. Press
through the car parts screen so you can race!
When the race is over:
If you don't take 1st, then select Retry. If you've taken 1st place, choose Track instead of Retry or Quit Game. This takes you back to the Track screen. Press through the track and difficulty stuff. Then pick a new racer to win with.
Rinse and repeat until you've won with all 12 racers.

The JACK OF ALL TRADES achievement in Nickelodeon: Kart Racers worth 57 pointsPlay as each racer at least once.
Sometimes you earn a Victory Lap after a win. You can collect chests for bonus coins or car parts. If you can improve your vehicle as a result, go for it.
