You can catch these in the desert using sardines (near the fast travel boat).

You need to have completed all of the Fisherman's Gambit quests to be able to haul it in, otherwise your line will just keep snapping.

FYI You can also use carp or even lure in the desert to catch them - just did this today whilst grinding out rusted clumps

The key for getting this one is the number of times the pole dips. If it's a Rhizodont the pole will dip twice pause and dip 2 more times. Happens only one in ten attempts.

Like the comment above use sardines and wait for the 3rd tug. You will know it’s the rhizodont when your bar is depleting at the slowest rate possible. Good luck!

Yes just keep trying, I got 12 Hyneria's and bunch of rusty items before Rhizodont, took about 30-40 sardines in total. And yes, third dip is the charm.
