You can do this fairly easily on the first playthrough (set to Easy). If you're playing on Normal and you want to get it on the first playthrough just save before the fight, set to Easy, and use the Phoenix Spear from Facade. I used Dark Whirlwind to kill all the Shades (you have to kill them before you can attack Gretel), then just spammed Dark Lance and melee attacks. I wasn't sure how long this took but it was doable. This will repeat a few times until she reaches her final "form" (for lack of a better word) which is just her doing a fast-moving spin attack around the room. Evade out of the way when she gets close and just burn her down with magic.
The timer starts right when the fight does and the cutscenes that play during the fight do count towards the timer, so be sure to skip them once they appear. Once you've taken her down and if it was within the proper time limit, the trophy will unlock.

For this and all of the various boss kill achievements, bear in mind that time spent watching cutscenes DOES count. You may manage some of these in your first playthrough, but don't save and reload a bunch trying to get them done. You can do it on your first playthrough. I did it (on hard) with: level 21, 2 Strength Capsule, 2 Magic Capsule and as a first level Ax of Beheading weapon at 15% Attack Power. Of course we skip the cutscenes. The boss has an unpleasant attack when he starts spinning, because you can’t hit normally, but even with it it’s doable.
