Evade out of the way when she gets close and just burn her down with magic.
The timer starts right when the fight does and the cutscenes that play during the fight do count towards the timer, so be sure to skip them once they appear. Once you've taken her down and if it was within the proper time limit, the trophy will unlock.

For this and all of the various boss kill achievements, bear in mind that time spent watching cutscenes DOES count. You may manage some of these in your first playthrough, but don't save and reload a bunch trying to get them done. You can do it on your first playthrough. I did it (on hard) with: level 21, 2 Strength Capsule, 2 Magic Capsule and as a first level Ax of Beheading weapon at 15% Attack Power.
