This guy fights the exact same way as he did the other three times you fought him. The only difference is he has an attack that wipes out 90% of your life.
The easiest way to beat him is to have the True Dragon Sword equipped. Make sure to use lots of blocks and dodges. When he finishes an attack sequence follow up with a few hard combos of your own. (pressing the Y button about three times will do it)
Once you have the timing down you should be able to beat him within a couple minutes.
Just remember...block...dodge...hard attacks
