Whenever you're behind an enemy or you daze them (shown by the stars on top of them), press and move the control sticks in the directions shown on screen to grab them and hit a wrestling move.

Occasionally, the Slash Reel will give you three bells, putting you into Throw-Crazy Mode, a temporary buff that lets you grab them without needing to daze them first. You should be able to hit at least multiple ones on the same enemy, depending on their health. You can still trigger it while they're on the ground during this time.
