I finished all the other achievements in about 5800 days. On xbox you can check this by going to your Collection and hitting RT to see your stats.
To grind out the rest of the days in the fastest way possible I created a Custom game and turned on the modifiers for +200 batteries, +200 food and +200 hope. Then start the game and unlock the first 2 map points and then just travel between the 2 until you starve to death or your convoy dies. Make sure one of the points isn't a camp or city/market as you'll waste time closing out of the menu when you land on it. You will get about 250 days each time (takes about 5-10mins) and just rinse and repeat until you hit 7300 days.

Just some more data: I finished all other achievements with about 4100 days. Tooke me about 1 hour to get to those 7300 days. This method is clearly the quickest one. Good idea!
