If you have completed the game previously then collecting a single coin should pop the achievement for you.

If you have waited for all TUs to finish releasing you will earn this on your way to completing kills, ship upgrades and level progression based achievements.

1000 coins isn't unlocking for me despite having over 2000 saved, any ideas as to why?

I only had the original game completed, had done none of the updates. I started the game up and popped a few achievements right away from the 3 updates that had come out. I then started playing, but noticed that no more popped after an hour of grinding. So I had to quit the game, restart, and sign in again with my profile before I guess it finally checked and awarded me the remaining achievements.
