How to unlock the Training achievement in OCTOPATH TRAVELER - Definitive Guide
As far as I know there are 13 people you need to challenge and defeat in Cobbleston, some you can do right away and some you need to do later on. Also a few of them only spawn when you return to Cobbleston, but I'm not sure so correct me if I'm wrong.
I've divided them into 3 categories.
Immediatly doable
- Watchman: on the top right
- Watchman: on the bottom right, near a fence
- Village Headman: in front of a small house to the right of the tavern
- Villager: in front of the general store
- Philip's mother: inside the house left of the general store
- Noelle: the historian near the house in the back
A bit harder (probably do these on return)
- Melancholy Youth: on the top right, near the Watchman
- Cheerful storyteller: near the tavern
- Villager: at the top right
- Kindly Farmer: near the tavern, looking out into the distance
- Courageous Cowherd
- Captain of the Watch
Both are near the house with the chopping block and axe
Break your balls
- The villager in front of the tavern entrance
She will destroy you. Only challenge her when you are at least level 20. This Villager pumps out 300 to 700 damage (or more even?) a turn and isn't weak to spears or swords (her weaknesses are Shadow, Ice and Fire, so use Soulstones I guess). You can try to do this earlier, but in my experience you will use up all of your healing grapes and waste too many turns healing.

I managed to take out the tavern villager at lvl 19 with Olberic equipped with the Apothecary subclass. That gave him both a simple ice spell and the ability to heal. Was a long fight though. More levels would definitely have helped.

This achievement and some of the other high level blocking chests/hidden items, you are stuck with Olberic instead of Haanit (although I prefer always having a Hunter than a Warrior class always available to me). Once some of the subclasses become unlocked, it does help give Olberic more variety staggering enemies and doesn't force you to pause and track down high level monsters to capture.
Arrowstorm, Leghold Trap are much more valuable in normal battles since you can stagger multiple enemies simultaneously with arrows/send bosses to the end of the turn to get more staggers. Warrior Class only has Level Slash which only damages all enemies once and Thousand Spears to cause multiple hits in a turn, but this only targets single enemies.

Do you have to win or just challenge?

I was able to do this achievement at Level 25, after completing all Chapter 1 stories. I believe this is the earliest you can do it, as new NPCs arrive in town after Chapter 1 is complete. Using Olberic's Path ability, Challenge and defeat every villager in single combat. You can always put this off until later in the game to make it even easier if you need.
