For the Void Rider levels in Sunshine Valley, Cloverbrook, and Burntrock, there are challenges related to the Lagoon Creature, Hairy Beast and Cows (respectively). You need to complete the following the challenges for each of the following levels:

Sunshine Valley:
- Old Bridgey's Old Bridge: Find the Lagoon Creature
- Glowing Bog: Perform a Special Grind for the Lagoon Creature
- Lighthouse Lagoon: Find the Lagoon Creature

Cloverbrook:
- Unspeakable Creek: Perform two different grabs for the Hairy Beast
- Hazardous Henge: Tweak a grab for the Hairy Beast
- Alpine Woods: Find the Hairy Beast

Burntrock:
- The Forgotten UFO Tours: Find the Queen Cow
- Moo-shine Ranch: Tweak two different grabs for the herd of Cows
- Abandoned Observatory: Find the Queen Cow

These creatures are somewhat well hidden, but I managed to locate them without too much issue. As long as you take each of the branching paths over multiple runs/attempts, you will find them. At time of writing this guide (same day the DLC launched), there were no video guides out, and I found them and completed the challenges in around 30 - 45 minutes.
