How to unlock the Certified Professional achievement in OlliOlli2: XL Edition - Definitive Guide
In every one of the 50 levels (25 Amateur/25 Pro) there are 5 challenges. The top two are always a score to beat followed by a combo to reach and how you must land it for it to count. The other 3 challenges vary from level to level. Some times it may be collect all of item [x] and finish or finish in so many seconds or any number of other tasks.
You will have to have mastered all the techniques the game has to offer before attempting the challenges on the final levels. The video below shows me completing what I consider the hardest challenge in the game: Include 9 Revert Manuals and 9 Grind Switches in a level long combo!
If this looks like it's going to be too much, you may consider passing up on this monstrous challenge. If not, remember that Grind Switching too fast will throw you off and insta-bail you. Also, in the video I don't keep count of how many Manual Reverts and Grind Switchs I do, I just did them anywhere I felt I could squeeze them in. I haven't found any tricks to the challenges in this game, it just takes a lot of patience, fast reflexes and quick thinking.

I haven't played the game yet, but is the one that you're showing us in the video really harder than landing all perfects on the level?

Oh my, yes. Landing perfects is as simple as either grinding, landing or doing a manual right as you hit the ground. These are done by either pressing a direction on the stick for the grind, pressing A as you land or pressing a direction and a as you hit the ground. Alternatively, to do a revert manual, you must press a bumper and a as you touch the ground and then press either back or forward at just the right time or else it'll only be a revert. As for grind switching, you have to get a perfect grind and then switch it with a direction and A.
The true reason it's so hard is that you must do 9 of each without breaking your combo from beginning to end. Sorry for such a long reply, just trying to cover everything. Landing all perfects on any level is not as hard simply because you can break your combo without a problem.
