Skatepark
These are tutorial levels. The first five are done upon starting the game and the remaining eight are unlocked by progressing through the amateur levels.

Levels
Found in 'Career' from the main menu, these are the 50 levels of the game broken down into five levels in five different areas across two difficulties.
Amateur levels are unlocked by simply completing the previous amateur level. Pro levels are unlocked by completing the five challenges in the corresponding amateur level.
Challenges
Each level has five challenges- tasks within the level that you must complete.
All levels have a combo and score challenge. Other types are collectibles, specific tricks, level long combos, only perfect grinds/landings, etc.

Spots
Spots are short levels. There are 50 total and one is unlocked each time you complete a level in career mode.
RAD Mode
RAD mode is unlocked after completing all five challenges on each of the 50 levels. It's accessed by a toggle on the level info screen that makes it so any landing that isn't perfect causes you to fail. You need to complete all 50 levels on RAD mode, which I found pretty easy compared after doing everything else.

Roll 7 Devs
10 levels have a tricky path that leads to a Roll 7 Developer and you need to find them all.

Free-Skate
Available in the main menu, Free Skate are five levels (one per Career area) that you simply need to get to the end of.
