Gold coins are all over the place in the game, enemies drops them when killed, and you'll find them in destructible barrels, crates, boxes and other things.
Simply grab 100 of them total, and you're good to go.

To be honest, I'm not entirely sure if this achievement is cumulative or if you need to have 100 coins on you at once, but ultimately it doesn't matter because you'll far surpass this even very early in the game. Considering chests give you 30 coins and there are dozens of them, you'll reach 100 coins quite early in the game.
