Pretty straight forward achievement! Subquests are the random quests you can do around town by interacting with the random NPC's with the yellow thought bubble with a "?" mark on the map.
They pop up randomly and be aware that, unlike Missions, you can't re-do them if you fail them, but don't worry. You easily can complete them as you progress through the campaign chapters, with a lot of subquests popping up between chapters.
I ended up unlocking this around chapter 6-7, but I wasn't too focused trying to knock them out right away.
