There are a couple methods to get this done, but you'll have to make a conscious effort to make them work. Note that you can't use your weapon even if it's non-damaging, and I believe assists from spared bosses count as spells/attacks so if they interfere it'll void this achievement on those nodes.
A method you can attempt on any run involves the Decayer enemy in Forest which throws poison across the field, hitting itself and other enemies in its path too. If you're early in a run it might be alone and you can just dodge to allow it to eventually KO itself, if it's with other enemies you'll have to lure Decayer to them to get them hit with enough poison to KO them too.
Another method is to enter Hazard nodes until you find one with a volcano, which hits random squares and will eventually do the work for you, or a self defense turret somewhere on the field, which retaliates with damage when hit so lure enemy attacks into it and it'll do the rest.
The other methods involve artifacts. A combination of Poison Vial + Resistant Strain is a good one, starting enemies with poison and never letting it expire fully. Static deals damage on contact, so it only works on enemies that cross into your field. Riffle will deal 20 damage when you shuffle, so just manually shuffle your deck until everything is defeated. Flak Jacket and Thornmail can deal damage back when you get hit, but is only viable on really early levels when the enemies don't deal too much damage for you to tank.
