Medium ships unlock once you've completed a small one. I got this playing on zen mode, which makes things a lot easier.

- take your time, after each room make sure you've got water and food around
- get the dog straight away
- get an exercise bike early to help generate cash
- buy a mop for each player
- use the quarantine sprays to stop doors getting infected
- playing co-op is a lot easier
