How to unlock the Squaretasking achievement in OUTRIDERS - Definitive Guide
There are 55 total side quests none of which are missable. You can backtrack to earlier zones at most points in the story and after the final story quest is done. The final side quest does not become available until after the story is complete.
There are four types of quests.
25 general ones
10 Historian quests
10 Hunting quests
10 Wanted quests
The Historian, Hunting and Wanted have achievements for finishing the set and each set rewards a Legendary piece of gear. You must return to the quest givers to hand these in and get the reward. The reward is tried to your level and World Tier at the time you finished the objective so there is no point in stock piling the quests for better rewards.
One of the general ones, Outsiders Legacy is a large multi-stage quest with its own achievement tied to it too.
For the most part they're very straight forward but at time of writing the waypoint tracking can break in later missions leaving you to try find the location. Usually this can be fixed by traveling to another zone on the world map and then back again. It's also on the list of known issues so it will hopefully be fixed in a later update.
One that may give you trouble is a hidden quest called Forgotten Chapel in the Canyon of the Grand Obelisk, a video guide on how to unlock it has been included below. (Thanks Kenshira and Raptor Demon)
The final quest will be available in the camp/garage area in Rift Town after finishing the main quest. If it's not there talk to Channa about Jakub and it should force it to show up.
If you want to check your progress you can do so by going to the Progression section of the Accolades and looking at the Philanthropist accolade. The world map also has a break down of what you have completed.

worth noting 1 side quest isn't available to pick up, until you have activated all 6 pillars, it's called "Forgotten Chapel", Located in the Canyon of the Grand Obelisk, you can easily miss this one on your playthrough since there is no markers for this one. i was missing 1 after i beat the game, looked everywhere online to find out why it said 24/24 general, and found this one to be the reason.

Anyone else havin issues with the Pour one out mission..have completed the game, but this one wont show at the door in Rift town like some have suggested

There are a total of 55 side-quests to complete in the game, none of which are missable. You can see a full list of the quests and their locations HERE. Each quest can then be tracked and you simply need to follow the markers to the appropriate location, and return to the quest-giver to complete them. There is only one quest that isn't readily shown on the region maps, which is "Forgotten Chapel" (#52 on the list I linked before).
I would suggest doing quests as you go through the story when you see them, as you will get extra experience and loot from doing them. However, you could wait until after and mop them all up at that time if you wish.
There are a total of 55 Side Quests to complete, all but one of which will be marked on your map in some way shape or form. The Historian, Wanted and Hunter questlines all have 10 quests each. The Outrider's Legacy questline has 14 so there's 44 already with the other quest-related trophies. All you'll need to look out for is a yellow "!" on your world map to let you know if a new one has appeared. There is one, however, that is not marked on the minimap and is found in the Canyon of the Grand Obelisk (Forgotten Chapel - see below for more info). Each step of the questlines counts as one completed quest towards this trophy. Please do note that in some cases, you'll need to progress with the story before the quest becomes available. Forgotten Chapel: As stated, this quest is the only one that will not have a map marker or actual quest objective for it until you are just about done with it. When you make your way to the Canyon of the Grand Obelisk, there will be 5 Keystones that are not marked/unrelated to the main objective that you'll need to interact with. 1st Keystone: When you first arrive in the area, head up the first hill and go left at the first set of stairs. The keystone will be glowing blue.
2nd Keystone: After going up the 1st set of stairs, you'll need to defeat a few waves of beasts. Take note of the Venomous Perforos spitting poison from up on a higher ledge. When the beasts have been cleared, make your way up to the ledge the Perforos were on and follow it into a temple. In the middle of the room you enter into will be the Keystone.
3rd Keystone: Story Related. You'll need to hit this one to open up a door to progress forward with the level.
4th Keystone: Story Related. You'll need to hit this one to open up a door to progress forward with the level.
5th Keystone: The 4th Keystone opens up the door to the final area of this level. On the opposite side from where you enter will be another set of stairs leading up. At the top of the stairs is the 5th and final Keystone.
When you press the 5th one, you will automatically pick up the "Forgotten Chapel" side quests which will now put a marker on your map for the next location. Head towards it (if you're going to fast travel, go to Wrecked APC) and walk up to the glowing door.
You'll spew out some dialogue, then the Keystone just to the right of the glowing door will activate. Interact with the Keystone to open up the door and head inside. Interact with the chest in the middle of the room to complete the quest.
