How to unlock the Vanquisher of nightmares achievement in Outward - Definitive Guide
This achievement is for finishing 5 unknown arenas. I made this solution to note that the 4 arenas in Caldera count for this, and you need to do the 4 Caldera arenas for an achievement.
This means if you intend to do the Three Brothers DLC, you only need to do one unknown arena in the base game (or the Soroboreans DLC I guess). Note that one of the arenas might be missable, the New Sirocco one, if you fail the last quest. So don't do that. Strategies will vary wildly depending on your build, for what it's worth I used a Dream Halberd build from a youtuber named Sheenshots.
It may not be the best build but I'm partial to 2H builds, and builds that are relatively simple to execute. For this you buff up and smack shit with your regular attack and Moon Swipe, the high impact continuously knocks down most foes. I only really needed to bother with learning boss patterns for the final boss and his unknown arena version, as they have a ton of HP and were harder to knock down. I did get the Cabal Hermit tree instead of Philospher though, I really like Infuse : Wind, and it's not hard to get mana regen (which is the Philospher breakthrough) from potions or food. I also put Molepig Sigh on the Dream Halberd instead of Poltergeist.

-The Torcrab is a bit annoying because he spams orbs that spawn damage over time zones on the floor, and there can be 10+ at any given time. I used Infuse:Blood (comes from the Krypteria (sp?) City Hall upgrade if you're Blue Chamber) to poison him and then let the poison kill him once he got low while I stayed out of all the AoE.
-For Grandmother, she spams spells at you and is invulnerable, you do damage by killing the other two again and again. She heals them with her own health and will eventually die this way. Neither of the enemies are hard to stagger, so I would go for the mage and place myself so that the warrior would get hit by my swipes too. Grandmother's spells could be a little annoying but nothing seemed to do too much damage so I wasn't too worried.
-You fight the gargoyles one at a time so the fight isn't as bad as it sounds. For this I would walk near them to bait an attack, then go in afterward and I could usually stagger lock them from there. If you're lucky you can sneak up on them while they're stationary and stagger lock them as they activate.
-The Elite Crimson Avatar was a big pain in the ass due to his 6000 health. He is immune to poison and bleeding so my only option was slashing him to death, so I had to learn his attack patterns well enough to win the fight. His melee attacks are simple enough to deal with though he has a few combos. If you're far away he may jump to you, he will do one strike, delay, and then 2 more. This is a prime time to go in and start smacking him. When he starts summoning the fire orbs the delay is long and you can get right on top of him and start hitting him for an easy stagger and the orbs won't hit you. When he dashes back he will throw poison darts so stay away and dodge them. When he summons the fire aura he will summon two fireballs that do a ton of damage and hone in on you, so stay away from that too.
-As for the 5th unknown arena, I did the Elite Mantis Shrimp in the Voltaic Hatchery, which is the dungeon in Chersonese. You can find it south of the exit to the Enmerkar Forest. You'll need 5 Gold Lich Mechanisms to enter the unknown arena, and I got these from the enemies in the Spire of Light in the Hallowed Marsh. There are some enemies in the Hatchery that drop it, but I'm not sure it's enough to get 5. The actual fight is pretty easy. I used Infuse:Blood and went to town.
