Pretty easy if you boost. Otherwise it will take a bit longer.
You will already be doing the move in the tutorial, but I'll explain it again.
Hold Y to block, then wait for the enemies move. If he kicks, you have to counter with LT or RT (while still holding Y!). If he punches you have to counter with LB or RB.
I'm pretty sure the counters in the tutorial also count towards this, so if you play the tutorial a few times up to that point and quit out, you should get the achievement as well.

Can confirm, tutorial counters count towards this. This can be one of the first achievements you just knock out quickly.
