(2018 solution) This achievement is much easier to unlock since the introduction of Wrecking Ball as his ultimate consists of dropping 15 proximity mines close together. (Symmetra can only place up to 3 turrets now since her rework, which would have made the achievement even rarer, so this makes sense.)
I unlocked this whilst defending on Oasis, so i'm assuming it will be easier to unlock on control maps because the other team is wiped out regularly and usually a solo Hammond is stranded on point which leaves a good 10-15 seconds to attack his ult with Winston's Tesla cannon.

While all turrets and traps work for this achievement, you want to go for this achievement only if the enemy team has a Symmetra, because her little beam turrets are plentiful and are easily destroyed.
Once you find that the enemy team has a Symmetra, you're basically going to have to bully her for a while. Find out where she's setting up camp and keep running in there, taking out her beams, and running away. Don't worry about killing her, because that might turn her away from that location and you'd have to find her all over again.
Keep in mind that this has to be done in only one life. If you die, it resets. So keep dropping in, killing a couple turrets, and leaving to get some health and to let the Symmetra reset her beams.
And if you're playing with a friend, it might help to have an escort crew running with you to make sure you don't get too banged up or to keep you healed.

I got this easy due to the other team picking 6 Symmetras. I wasn't even planning on being Winston, but when I saw 6 Symmetras, I switched. They put tons of turrets on the front door during pre game setup. I put down Winstons shield, popped out and took out 3-4 turrets, ran back into the base and refilled my health, repeated that two more times and got the achievement within the first 30 seconds of the match lol.

Just unlocked last night super easily, play quick play classic and hope the other team picks wrecking ball(commonly happens at least in my game) play as whoever you want when you see wrecking ball use his minefield die and switch to Winston, then destroy all of wrecking ball (hammond) mines there are 15 total and only need 10 for the achievement. I’ve tried many other methods but got it first try doing this.

With the appearance of the hero Taran in the game, getting this trophy has become very easy. If the enemy team has a hamster, just stay close to him, sooner or later he will use his ultimate, and his mines count as separate attack objects (like Junkrat's mines).
