This, for me was the quickest and easiest by far. The way to emit sparks for 1 second 100 times goes quickest in extra mode 1. Don't worry about eating the pac dots and just head to the bottom row of the maze. Hold down as you move and the ghosts should ignore you for quite some time. I was able to get 30+ in multiple games in under 70 seconds.

For the score missions, try to chain eating ghosts by eating all 4 and quickly eating a power pellet afterwards. If done right, the score combo stays and you'll get up to 3,200 points per ghost eaten. You should have plenty of time if you get the combo meter staying up.
