This achievement will come through with natural progression of the campaign and the survival modes. All you have to do is essentially pick-up 500 crates of ammo. It can be any type of ammo, and in any game-mode.
Some levels such as the Colosseum level, will reward you with a tarot card for collecting every ammo crate, so it is HIGHLY likely that this will come through will normal playing.
Just a quick note however, you won't pick up the ammo if you have max ammo in the gun. So if you want to get this achievement done and dusted quickly, then every time you find ammo for a maxed gun, you can simply fire a round off and pick it up; but again, it is most likely going to come from you working towards other achievements.
