As part of the tutorial you must make a pal sphere (they require 3 wood, 3 stone and 1 Paldium fragment all of which are collected very easily). In my save I turned around and there were a couple of hidden chests at the start which had pal spheres in. Once you have made or collected these go and punch a pal to weaken it then hold RB and you will see your chance of catching it with the pal sphere. If you weaken them enough this will be 100% and you will get the achievement once it is caught.

If you're having trouble finding Paldium(?) make a pickaxe and mine some of the stone nearby. You will get stone, but you get a chance to get Paldium as well.

there is blue glowing rocks near the start of the game you can just farm these and they only drop Paldium - Mine was located down the hill and just to the right next to a bridge)
