Description is incorrect. This HAS to be done in a quick match. Can not be done in a custom lobby.
Do as achievement says. Hit puck, and knock out 2 or more players with a shot that goes through the opponents net.

Also, it may have to be two opponents. I super punched the puck, it knocked out two players (one opponent, one teammate) and it went straight in the net.
I even confirmed on the slow-mo replay.
Fully expected the achievement to unlock, but no such luck.

Nevermind. It says "over two players" not "2 or more". I had only knocked out two when I didn't get it.
